Cucumber Kimchi


Hawaii is a very unique place where there is an eclectic blend of Pacific Islander, Asian, Native Hawaiian, American, and Portuguese…which means a very diverse and interesting food culture.

One of my biggest food loves while visiting Hawaii was kimchi.  I’ve always loved kimchi and haven’t had it in my diet in a couple years.  While in Hawaii, we went hiking with a friend and after we pull into the gas station to fill up and grab some water…our friend Kai then comes out with a to-go portion of kimchi for our ride back.  Kimchi at the gas station!?! My mind was blown!  I then visited my newly anointed favorite Hawaiian market Foodland and raided their kimchi section.  I walked out with a couple tubs, one being cucumber kimchi.

We got back to the house. Andrew made me a passion fruit cocktail and I sat on our friend’s ocean front patio with cucumber kimchi in tow.  I had to hold myself back from devouring the whole tub, so I wouldn’t seem rude to Andrew, he did make me a delicious cocktail after all!

That night I was determined to make cucumber kimchi back on the mainland.

So I did.

Kimchi as a fermented food.  The fermentation process is like pickling.  As it ferments in the jar, beneficial bacteria starts to form.  Consuming beneficial bacteria is a great way to bring balance to your digestive system.  Friendly bacteria is very susceptible to deplete from antibiotics, food treated with antibiotics, and tap water, which has been detected to carry trace amounts of antibiotics.  Keeping friendly bacteria in balance improves skin health and improves skin’s defenses from free radicals. And then…there are the beauty benefits of cucumbers.

So here is my recipe, my first go at kimchi.  Just to be clear, this is a fusion of many of the recipes I read.   Feel free to add or delete per your taste and share your recipes in the comments below!

GH Beauty Bites Cucumber Kimchi

5 cucumbers chopped or sliced however you prefer

2 sprigs of green onion chopped

1/2 tsp of minced ginger

1 clove of garlic minced

1 tsp crushed pepper

1 tsp of kosher salt

1 tsp of honey

1 tsp of apple cider vinegar

2-3 sterilized canning jars

Put cut cucumber in large bowl and add kosher salt. Thoroughly mix.  Let cucumber sit in bowl with salt on the counter for four hours.  You will notice water being extracted from the cucumbers and collecting in the bowl as time passes.

Add remaining ingredients and mix thoroughly. Spoon cucumber mixture into sterilized jars, including liquid.  Pack into jar, leaving a couple inches free at the top to prevent spillage during fermentation.  Close lid tightly and leave on counter for 24 hours to ferment, mixture may bubble during this time.  After 24 hours, it is ready to eat. Store in refrigerator. Keeps for a couple weeks.

Delicious snack and is unbelievable warm with rice or quinoa!

Interview With Philosophie’s Sophie Jaffe

Goddess Huntress | A GH Interview Philosophie

Sophie Jaffe is the green brain behind the superfood brand Philosophie.  You may have indulged in Philosophie’s superfood powder blends in some of the juice bars in Los Angeles, such as Equinox Gyms and Kreation Juice, or have seen it at Whole Foods.  Philosophie is incredibly delicious (hello cacao!), which is not a common trait with superfood powders (this is coming from an avid sipper of superfood drinks).

Having worked as personal chef for celebrities (ahem, George Clooney), Sophie uses her culinary creativity to incorporate superfood powders in all foods.  With Philosophie you can toss out the usual “just add water or your favorite juice” instructions.

Not only is she the antioxidant queen, she is also a mother of two…with impeccable glowing skin, I must say.

GH/ What led you to develop Philosophie? 

SJ/ Philosophie was born after I grew tired of working for a juice bar and creating cleanses for hundreds of people every month but not being appreciated (financially + emotionally) for my hard work. I split away and started creating cleanse programs for clients out of my kitchen. From there I noticed I was using the same superfoods in the same recipes over and over again, so combined them all into one jar to make my life easier. Thus, Philosophie superfoods were born.

GH/ You are very creative with recipes that incorporate your superfood powder and you are a mother of two. Can you share a couple ways you get your children excited about Philosophie?

SJ/ Yessss I have to be creative with two picky boys! Although they both have healthy appetites, my Virgo 3 year old decides what he likes and doesn’t and if that day he doesn’t like green, I need to get creative! I usually let Kai pick a food he loves or is craving and then use that as my inspiration. If he says he wants ice cream, I make a delicious Berry Bliss + Green Dream mousse and add tons of ice so he thinks it’s an ice cream. I’ll even put it in a gluten-free cone and add 4 rainbow sprinkles just so he’ll eat the superfood rich “ice cream”. If it’s breakfast time and he wants oatmeal I’ll add nut butter, some green dream honey and Cacao Magic powder for “Chocolate Oats”. If he wants a PB&J I mix one of the superfoods in with almond butter and layer it with fresh fruit + Philosophie infused manuka honey. I truly “Make Every Food a Superfood” because, why not?

GH/ I find it refreshing that you have “grounding dinners”.  Can you tell GH readers what that is?

SJ/ Most of the day I will eat a high raw food diet (lots of veggies, fruit/veggies juice, fresh fruit, nuts, etc) and that’s what keeps my energy soaring. In the evening I need to unplug, unwind and recharge. I usually eat a grounding dinner–something that makes me feel connected to my “yin” side and allows me to shut down for the night and relax. Sometimes that’s something comforting like a quinoa pasta and homemade sauce, other times it’s a piece of fish and roasted veggies. It depends on my mood + what my body is craving but almost always includes something cooked.

GH/ Which one of your superfood blends is the most power-packed for skin health?

SJ/ ohhhh this is hard to pick! The Cacao Magic is AWESOME for skin because it has raw cacao powder + nibs which are super abundant in antioxidants. Berry Bliss contains the highest vitamin C rich foods on the planet, including camu-camu. All of my clients notice an increased “glow” + clearer skin after using any of the superfood blends because they are loaded with the top antioxidant foods of the earth. 

GH/ Ok, you must have a naughty indulgence once in a while.  Divulge. (We won’t judge!) 

SJ/ once in a while? I have a HUGE sweet tooth. It’s an extremely rare day if I go without some sort of indulgence and/or chocolate. I literally eat raw cacao every single day. I laughed out loud when I saw this question because I’m sitting here chowin’ on these Cacao Magic truffles that taste like a mix between flourless chocolate cake and an almond joy. Life is all about letting go and giving in after you’ve worked hard and earned it. I work out and am active regularly, I eat super well most of the time and sweets make me happy. I have a blessed life and I intend to enjoy every moment and live it to the fullest. That includes indulgences! My mantra is “it’s a treat, not a cheat!” I see so many others in my field talking about “cheat meals”… that’s just not how I look at food. Food is beautiful and as long as it’s REAL food; anything is fine in moderation. 

GH/ Wow, that is probably the best mantra I have heard in a very long time!

Tomatoes/ Rich in lycopene, these juicy gems are best eaten cooked, which increases their SPF boosting potency. A study showed that eating 1/4 cup of tomato paste a day increases your natural SPF by one third.

I am so thrilled to feature this special Beauty Bite.  Giddy actually.

I have had such a blog crush on Happyolks for quite some time now.  I live vicariously through Kelsey’s and Shaun’s beautiful cooking photography and their recipes. I’d love to be a fly in their kitchen or be their personal dishwasher.  In fact, I’m not the only one who does…Happyolks was a finalist in the Saveur Magazine’s Best Food Blog Awards this year! Well deserved.

Today, Kelsey is sharing her Happyolks Beauty Bite on Goddess Huntress, Nori Rolls with Edamame Wasabi Spread, along with her beauty favs!

Happyolks Nori Rolls with Edamame Spread

  • 8 sheets toasted nori
  • 1 peeled daikon radish
  • 1 cucumber
  • 1 cup sunflower sprouts
  • 1 small mango
  • 2 small avocados
  • 24 sprigs mint
  • handful cilantro
  • (optional) 6 oz smoked wild salmon OR tofu


  • 2 cups edamame
  • 2 + teaspoons wasabi powder
  • 2-4 limes
  • 8 sprigs of cilantro
  • 4 tbsp olive oil
  • dash of water
  • sea salt

To start, prep all of your veggies and working ingredients. Julienne the cucumbers and radish. Thinly slice the avocados and mango. Peel apart salmon, or cut tofu into 1 inch by 2 cm strips if you’re making these vegan. Create an assembly line of the proteins, veggies, and herbs then begin to prep the edamame wasabi spread.

In the bowl of a food processer blitz together the edamame, wasabi powder (adjust measurements to match your affinity), lime juice, olive oil, water, and sea salt. Mixture should be just barely chunky, but not a total paste.

Place nori sheet on a clean work surface. Spread 1/4 cup of the edamame spread onto the sheet leaving a bit of uncovered nori for grip while wrapping. At the bottom edge of the spread facing you, begin to build your roll, filling it with strips of cucumber, radish, mango, salmon or tofu, avocado, and topping with bits of sprouts, mint, and fresh cilantro. Wrap with your hands from the bottom around the filling until completely sealed. If you use an excessive amount of spread, like me, you won’t need to seal the edge shut with water and your finger. Cut each roll into 8 pieces with a super sharp knife. Repeat.

For a woman who executes such delicious healthy eats in the kitchen, I had to find out Kelsey Brown’s beauty secrets in and out of the kitchen.  Here’s the dish…(see what I did there? I know you did.)

GH/ What are your favorite, clean beauty products?

KB/ I’m a huge fan of SW Basics skincare line. Every product is made with five ethically-sourced ingredients or less and are handmade by real people (my friends, too!) in Brooklyn, NY. I don’t leave the house without the Vegan Lip Balm and slather their three-ingredient Cream everywhere, literally, before bed. I also love Shea Terra Organics skincare line. My go-to products are the Rose Hips Black Soap, Ghassool L’Eau de Rose Purifying Paste, and  the Tamanu-E Regeneration Cream.

GH/ Since you are an anti-oxidant guru in the kitchen, do you use any of your ingredients for DIY beauty masks, toners, etc?

KB/ I make a greek yogurt, turmeric, and honey mask every few weeks… super easy and very healing, especially after being out in the sun too long. I love apple cider vinegar as a toner, shampoo, and bug bite/pimple killer.

GH/ What is your beauty secret weapon in the kitchen?

KB/ Inflammation fighting foods are my health and beauty allies in the kitchen. Fresh turmeric, ginger, seaweeds, mushrooms, berries, dark green veg, and healthy fats from salmon, avocado, and olive oil. These foods naturally calm your immune system, improve digestion, and reduce inlammation in skin and your organs.

Avocado Toast + Cinnamon Apples

My dear friend Vana made this for me during my stay in San Francisco.  It is such the simplest breakfast!  I for one and am an avid eater of avocados for breakfast.  I simply heat up a brown rice tortilla on the stove and fill it with a whole avocado sliced, topped off with a squeeze of lemon and sprinkle of salt…yep, that’s it.  So I was thrilled when she made her flavor filled avocado toast with sliced cinnamon apples.

Avocado Toast

-1 whole avocado (serves 1)

-2 slices of the bread of your choice

-1 half lemon

-red chili flakes

Simply toast your favorite healthy bread (whole grain, gluten-free, etc.). Mash avocado and spread on both toasted pieces. Squeeze lemon on top and sprinkle desired amount of chili flakes.

Cinnamon Apples

-1 apple sliced

-ground cinnamon

Slice and core the apple of your preference.  Sprinkle cinnamon on slices.  Yes. Crazy simple.

While you are munching, let’s talk beauty.

-Avocado reduces inflammation and its good fat is key for the body’s absorption of vitamins A, D, and E which all contribute to healthy, robust skin. Potassium prevents dry skin.

-Apples have collagen and elastin key to skin’s youthfulness. They prevent tissue and cell damage and promote healthy hair. Their B vitamins help prevent acne.  Vitamin C promotes skin cell production.

-Red chili flakes contain beta-carotene, which is then converted to vitamin A, preventing cell damage. It is anti-inflammatory.

-Cinnamon is an anti-bacterial, cleansing our systems.

-Lemon’s vitamin C neutralizes free-radicals. Yes, please!

Green Tea DIY Beauty + Giveaway

Confession: used tea bags skeeve me out.  While I’m an avid tea slurper, those couple seconds that it takes for me to toss the used, wet bag in the trash bin could not go by any quicker.  I also give my bags a second go, by pouring another cup.  There is so much goodness in that little green tea satchel, I just can’t throw it away. The second cup is so light and mellow to pass up.

Here is how you can skip tossing that bag so quickly and fully absorb the left over anti-aging, regenerating, and anti-inflammatory goodness.

  • after brewing a cup, open the post-brew bag and set those leaves free into a small bowl
  • add a tsp-tbsp of either/all of the following:

Yogurt (for “normal” skin)

Honey (for oily/acne-prone skin)

Avocado (for dry-“normal” skin)

  • combine together, slather on skin, absorb the antioxidants for 10 minutes
  • rinse off with lukewarm water, pat dry and apply your favorite facial oil

  • simply brew a cup of green tea
  • let cool, then pour into small spray bottle
  • spray on face as a toner and spray before applying sunscreen (allow to dry)

I remember when I first moved to New York, there was a show covering Moby’s recently opened tea house Teany in Manhattan’s Lower East Side.  In the piece, Moby says, “Everything just slows down when you drink tea.”   I remember thinking, “Wow.
